Pancake Recipe (Scaled to Serve 80 Pancakes):

Dry Ingredients:

• 15 cups all-purpose flour

• 10 tablespoons granulated sugar

• 35 teaspoons baking powder

(That’s about 12 tablespoons if you’d rather measure in tablespoons.)

• 10 teaspoons salt

Wet Ingredients:

• 12½ cups milk

• 10 large eggs

• 30 tablespoons unsalted butter, melted

(Approximately 1¾ to 1⅞ cups; feel free to round slightly if that makes measuring easier.)

• Optional: 10 teaspoons vanilla extract

(Adds a nice flavour touch if you’re feeling fancy.)

 

For Cooking:

• Butter or cooking oil (to grease the griddle/pan)

 

Instructions:

• Mix the Dry Ingredients:

• In a very large bowl (or divide into two large bowls to make mixing easier), whisk together the 15 cups of flour, 10 tablespoons sugar, 35 teaspoons baking powder, and 10 teaspoons salt.

• Prepare the Wet Ingredients:

• In another large bowl, beat the 10 eggs lightly.

• Add in 12½ cups of milk, the 30 tablespoons of melted butter, and the 10 teaspoons of vanilla extract (if using). Mix well until the ingredients are combined.

• Combine Wet and Dry Mixtures:

• Pour the wet ingredients into the bowl with the dry ingredients.

• Stir gently until just combined. The batter should be a bit lumpy – overmixing can make the pancakes tough.

• Rest the Batter:

• Let the batter sit for about 5 minutes. This resting period helps the flour hydrate and allows the baking powder to start working, leading to fluffier pancakes.

• Preheat Your Cooking Surface:

• Warm up a large griddle or a couple of frying pans over medium heat.

• Lightly grease with butter or oil.

• Cook the Pancakes:

• Pour roughly ¼ cup of batter onto the griddle for each pancake.

• Cook until you see bubbles forming on the surface and the edges look set (about 2 minutes).

• Flip the pancake and cook for another 1–2 minutes until the other side is golden brown.

• Adjust the heat as needed to avoid burning.

• Keep ‘Em Warm:

• As you cook, place the pancakes in a low oven (around 200°F/90°C) on a baking sheet to keep them warm until it’s time to serve.

• Serve the pancakes warm.
